Coconut Carrot Curry
Zutaten für 3 Portionen:
• 800g organic carrots
• 300g wild or jasmin rice
• 250ml vegetable broth
• 200ml coconut milk
• 2 red onions
• 1 clove of garlic
• 3 tbsp olive oil
• 1,5 tbsp curry powder
• salt, pepper, curry, coriander, turmeric to taste
• sesame seeds, flaxseeds and crushed peanuts for garnish
Zubereitung
If possible, buy all food in organic quality.
Cut off the ends of the carrots (do not necessarily peel), grate them completely, chop the onions and garlic, and fry everything in a pan with the oil at a medium-high level.
Cook the rice in the pot according to package instructions.
Deglaze everything in the pan with the coconut milk and vegetable broth, add the curry powder, and season with the spices. Simmer everything over medium heat for at least another 10 minutes and thicken with a little flour if the sauce is too thin.
Garnish with sesame seeds and crushed peanuts. Bon appetit!
